Bulletproof Avocado Bread Recipe

I've been trying to Bulletproof some recipes and am wondering how this one looks. It's adapted from a Recipe in the Vitamix Create recipe book.



2 cups raw almond flour

1 cup oat flour (you can omit this and use an extra cup of almond flour but the loaf doesn't hold together quite as well.)

1/2 c. Xylitol

1 tsp. baking soda

1 tsp. baking powder

3/4 tsp. ground organic cinnamon

1 tsp. Himalayan Pink Salt

3 organic free range eggs

1/4 c. Organic Virgin coconut oil

1 1/2 tsp. organic vanilla

3/4 c. Water

1 - 2 organic avocados, peeled, pitted



Preheat oven to 350 degrees and grease an 8 1/2 x 4 1/2 inch loaf pan. In a large mixing bowl, combine flours, xylitol, baking soda, baking powder, cinnamon and salt. Set aside. In a blender, place eggs, oil, vanilla and water and blend on high until well combined. Reduce speed to low and add avocado. Continue to blend for about 10 seconds. Pour wet ingredients into the dry ingredients and fold in until evenly incorporated. Pour into prepared loaf pan and bake for 50-60 minutes until a knife inserted into the center of the loaf comes out clean. Slice while warm and slather with organic grass fed butter!
