Soy lecithin

We've all heard all the horrible things about soy, so a natural question is why is non-GMO soy lecithin on the green size of oils & fats?



Any truth to this?
New studies suggest gut bacteria metabolites of choline promote atherosclerosis in mice through TMAO production and "augmented macrophage cholesterol accumulation and foam cell formation". [6] Mice fed with egg-yolk derived lecithin, developed arterial plaque in spite of no increase in cholesterol or triglyceride levels.




And what is the recommended amount?



Anyway, I got a can to try. Makes for a good snack.
