Easy Dessert / Energy Bite Chocolate Ginger (Sweet Potato Base)

Hey just wanted to share what I threw together for a dessert (for half of my dinner tonight haha)

0.5 cup mashed sweet potato (no skin)

2 tbsp cocoa powder

2 tbsp fine ground coconut

0.5~1 teaspoon fresh minced ginger

1 tbsp ghee

0.5~1 tbsp sweetener (used powdered stevia-erythritol)

1 to 2 chopped dark chocolate (optional)

Mashe all together (used my hands) and rolled into balls.

Roll in more shredded coconut if you like to finish.

Makes 5 balls a little smaller than 1 inch.

I slow baked the potatoes to not-fully-cooked, and half mashed them leaving crunchy texture which I really enjoyed but, these would be delish and probably chocolate donut-hole like if you blended them smooth.

Also just add more coconut and omit ginger if you're not into that. Add cinnamon if you have some good quality stuff.
