An adaptation of my regular coleslaw recipe. A couple of caveats: the cabbage is not cooked, and you probably want to have this with dinner because there are a few carbs in it.
1 recipe of BP Mayonnaise
1/2 head cabbage, sliced fine or grated
2-3 carrots, peeled and grated
2 spring onions, chopped
1-2 Tbsp. prepared horseradish
1 tsp. celery seeds
1 tsp. Xylitol
2-4 tsp. Apple Cider Vinegar
1/4 cup grass fed yogurt
1/2 cup pineapple, chopped fine (or crushed)
1/3 chopped green pepper (optional -- if you can tolerate it)
sea salt to taste
Toss all ingredients. Can be eaten immediately, but even better after refrigerated for about 4 hours.
