Sweet Potato And Egg Salad

Link to Homemade Mayo and how to poach an egg provided (Or I wrote instructions to poach an egg if you don't want to watch video). Recipe converted to mainly BP standards.

Sweet Potato and Egg Salad

[font=Arial, Helvetica, Tahoma, sans-serif]2 small sweet potatoes, peeled and cut into small 1/2″ pieces[/font]

[font=Arial, Helvetica, Tahoma, sans-serif]2 tablespoons coconut oil[/font]

[font=Arial, Helvetica, Tahoma, sans-serif]5 poached eggs a little well done then chopped [/font]

[font=Arial, Helvetica, Tahoma, sans-serif]1 cup ham or chopped cooked bacon[/font]

[font=Arial, Helvetica, Tahoma, sans-serif]2 tablespoons diced chives[/font]

[font=Arial, Helvetica, Tahoma, sans-serif]1. In a large skillet, heat the coconut oil over medium-low heat. Once the oil is hot, add the cut up sweet potatoes and saute until the the potatoes are browned and fork tender. Remove from heat and set aside.[/font]

[font=Arial, Helvetica, Tahoma, sans-serif]2. In a large mixing bowl add the diced eggs, ham/bacon, and chives.[/font]

[font=Arial, Helvetica, Tahoma, sans-serif]3. Add the cooked sweet potatoes, mayo, and mix well.[/font]

[font=Arial, Helvetica, Tahoma, sans-serif]4. Enjoy.[/font]

[font=Arial, Helvetica, Tahoma, sans-serif]How to poach an egg:[/font]

[font=tahoma, helvetica, arial, sans-serif]-Bring eggs to room temp.[/font]

[font=tahoma, helvetica, arial, sans-serif]-Fill sauce pan up to 1.5inches of water no more no less. (Measure your finger and use that from now on)[/font]

[font=tahoma, helvetica, arial, sans-serif]-Bring water to 190degress temp. A little over medium.[/font]

[font=tahoma, helvetica, arial, sans-serif]-Add apple cider vinegar to help with coagulation.[/font]

[font=tahoma, helvetica, arial, sans-serif]-crack egg in to small prep bowl and gently let egg fall out of bowl as you place in water.[/font]

[font=tahoma, helvetica, arial, sans-serif]-cook for 4:30 seconds [/font]

[font=tahoma, helvetica, arial, sans-serif]-slotted spoon to drain, enjoy.[/font]
