Hummus

So, I have a little addiction to this place around here that serves hummus with kabob and white rice. It's been our one regular cheat, but the last time we ate there I felt awful for quite a few days afterwards. "CURSE YOU BULLETPROOF LIFESTYLE!!", I yelled as I shook my fists at the skies. How could I go on without hummus?? Well, luckily I came across this recipe from Primal Kitchen Chaos, and I am pretty thrilled with the results. I'm not sure where Tahini falls on the BP scale, but the amount is pretty small, so I figured we'd survive...


Ingredients:

1 3/4 c. raw organic zucchini (peeled if you want it to look like legit hummus) chopped

1/2 c. raw, unsalted Macadamia nuts

2 Tbls. Organic Tahini

2 Tbls. Extra-Virgin Olive Oil

2 1/2 tsp. organic lemon juice

1-2 cloves of garlic (to taste)

1 tsp. Himalayan Pink Salt

1 slightly rounded tsp. cumin

Dash of Cayenne Pepper

Organic Paprika to garnish if desired.


She listed some optional add-ins which I have not tried but sounded fantastic: Roasted Red Peppers, Pine Nuts, Artichokes, black or Kalamata Olives.


Throw it all into a blender and blend until smooth and creamy.


I served this on top of some grass-fed lamb and a little brown basmati rice. It was DELISH!! The kids loved it!!
