Good Temperature To Keep Butter While Cooking

I forgot to defrost my meat for today, so tonight I'm gonna eat eggs! Lots of eggs! And maybe an avocado. #Eggstravaganza!

I'm going to try soft boil some, but I'd also like to gently fry some in butter but sunny side up. I don't want to denature the butter fats, or over cook the yolk.

Butter's melting point is 95°F/36°C and the smoke point is 300°F/150°C, so I imagine it would be somewhere bwteen the two. I'd like to know what would be a good temperature to keep it at to gently fry some eggs sunny side up.

I'm thinking around 110°F/43°C might be good.


Any suggestions?
