Cake Batter (Or Cookie Dough) Ice Cream

Made this for the family last night and it was a huge hit! No one had any idea that the secret ingredient was raw zucchini!! :)


1 c. Organic Pasture butter (melted a bit)

4 eggs (pastured is ideal but I use organic, free range) + 4 yolks

6 Tbls. Xylitol

2 tsp. organic vanilla

10 drops raw apple cider vinegar

2 smallish organic zucchini (around 1 3/4 c chopped - you can peel it if you don't want green ice cream)

1/4 c. Raw macadamia nuts

Rounded 1/8 tsp. Pink Himalayan Salt

Rounded 1/8 tsp. baking soda

Optional (to make it more like cookie dough flavored ice cream):

1/4 - 1/3 c. chopped dark chocolate ( I LOVE Green & Black's Organic 85% dark!)

Blend the eggs in the blender and slowly stream the melted butter in until incorporated and smooth. Add all the rest of the ingredients except for the chocolate and blend on high until smooth. Freeze ice cream in an ice cream maker and toss in chocolate during last 5 minutes of freezing (if using). Enjoy!!


  • Added 1/2 tsp. pure peppermint extract to the ingredients in the blender, and added the chopped dark chocolate during the last 5 minutes for mint chocolate chip icecream, and it was awesome! The kids still have no idea their eating healthy!! :D
