Avocado Deviled Eggs!

I'm not ashamed to admit that I made these for dinner tonight, and everyone loved them! These would be great for a party, or heck, just for snacking on!!


8 hard boiled eggs (there are obviously many opinions on the best way to do this, do what suits you best!)

1/2 large avocado (about 1/3 cup mashed)

1 tsp. raw apple cider vinegar

1 Tbls. organic shallot minced

1/8 - 1/4 tsp. cummin (optional)

Pink Himalayan salt to taste

Organic paprika to garnish

In a bowl mash avocado. Add apple cider vinegar, shallot, and cummin and stir until combined. Slice eggs in half lengthwise. Slide yolks into the avocado and mash together until thoroughly combined. Add salt to taste. Spoon avocado/yolk mixture into a sandwich bag, slice of a corner and pipe into egg halves. Garnish with paprika and enjoy!!
