Bp Carrot, Coconut & Almond Soup

My first bulletproof post.


 


I would love to know what you all think of this recipe. I adore it.


 


Serves 4-6


 


Ingredients:


 


2 sticks celery


2 garlic cloves


2 onions


1.25L homemade veg stock


200ml coconut milk


100g ground almonds or hazlenuts


Handful of fresh coriander (cilantro)


1 sweet potato (optional)


 


Directions:


 


Chop carrots, celery, onions, garlic, (sweet potato) and coriander and put into a large pan. Add veg stock and bring to the boil and simmer for about 10mins or until veg is cooked. Zap with a handheld blender until smooth. Add 200ml of coconut milk and stir it in.


 


Serve with chopped corainder.

  • sounds tasty.  To be more bp I would replace onions and garlic with oregano, add nuts after cooking to keep raw, and maybe use a homemade bone broth.  Dave has some blended soup recipes in upgraded chef book.
