Carrageenan

conventional wisdom is that carrageenan is safe in its undegraded form (not processed with exposure to heat or acidity), and that degraded carrageenan (poligeenan) is potentially problematic.



is that true?



So Delicious makes coconut milk ice cream, sweetened with erythritol. which looks pretty great to me but i'm concerned about the carrageenan content. on their website they say that none of it is in the degraded form, as it's not exposed to that sort of processing.
