I have both a ceramic-coated frying pan and a stainless steel one. Both work well. It's important to maintain the coating on ceramic pans. Might also consider cast iron. Never used it myself, but I know that some here do.

I would rate cast iron, and clay as the healthiest options. (Been meaning to pick up some La Chamba Clay Cookware myself)
Stainless steel can leach undesirables, but still much better than something aluminum/teflon crap
Ceramics: Be super picky and research the ones you're looking at getting; some ceramic pans use less than savory ingredients in manufacturing. (I'd avoid any from China)
There's also glass fry pans (or used to be).....but you need a gas stove.
Ceramic is a breeze. No mess when cooking or clean up. Don`t need to put oil or anything when cooking meat in it. Just flavorsome.
Think next time I`ll look more heavily into just what ceramic one we get. Thanks for that useful advice above Stinko.

WearEver are quite affordable, and claim to be PTFE, PFOA, Cadmium and lead free.
I personally prefer ceramic cookware. This cookware is easy to wash and also need just small quantity of oil.
