Bp "porridge"

I was looking for something in the morning to fill me up like oatmeal and I made up with this recipe. It's a porridge made from spagetti squash. I really enjoy it so I figured I would share.

Spagetti squash porridge:

1 baked spagetti squash (40 min at 400 degrees)

1 cup coconut milk

3-4 tbsp ghee or grass fed butter

1 - 1 1/2 tsp cinnamon

1 tsp vanilla powder

a couple dashes sea salt

3-4 tbsp shredded and unsweetened coconut

Sweetener of choice (I used 1 T coconut sugar and 1/2 tsp stevia)

1/2 cup sliced almonds

2-4 tbsp collagen protein powder

Scoop out the squash and add everything except the almonds to medium size sauce pan. Heat up and stir for a couple minutes. Add almonds and serve. You may need to add more coconut milk depending on the size of your squash. I used Trader Joes canned light coconut milk. It is watered down a bit but doesn't have any "stabilizers" or thickeners added like guar gum. I'd guess it makes 3-4 servings. It is also good with some sliced bananas or strawberries on top.

I'm thinking the squash and coconut milk could be blended in my vitamix with some cocoa powder, butter, vanilla and sweetener to make a chocolate pudding too.
