Creamy Broccoli Soup Recipe

I LOVE broccoli soup. I can't explain it, it just makes me happy. Here is a recipe I try to make regularly. image/smile.png' class='bbc_emoticon' alt=':)' />/>/>


About 2-3 heads of organic broccoli (6-8 cups chopped - I just use the florets)

1/2 large organic onion (diced)

1 large organic carrot (sliced)

1 carton (4 cups) organic veggie broth (I prefer the kind with no tomato)

1/2 cup organic pasture butter

Pink Himylaian Salt to taste


In a large stock pot, melt two tablespoons of butter. Add chopped onion and carrots and sauté until tender. Add broccoli and continue to sauté until florets are bright green. Pour in the veggie broth and continue to cook until broth bubbles and broccoli is tender. Using a blender (or even better, an emersion blender), add the remaining butter and blend the soup in batches to desired consistency (I like some chunkiness). Season to taste with PInk Himylaian Salt, and serve hot. I like to add a little shredded raw cheddar or Kerrygold Dubliner cheese to top it off! image/smile.png' class='bbc_emoticon' alt=':)' />/>/>
